Chocolate production centres on tempering — controlled heating and cooling that sets the cocoa butter into a stable crystal form. Tempering is what gives finished chocolate its gloss, its snap and its resistance to bloom, and it is the stage around which a chocolate line is designed.

After tempering, chocolate is deposited into moulds, cooled in a controlled cooling tunnel, demoulded and packaged. Where the product is coated rather than moulded, an enrobing line replaces the moulding stage. Which route applies depends on the finished product: bars, filled chocolate, coated products and compound chocolate each require a different configuration.

  1. Chocolate Preparation, Melting and Storage

    Chocolate is melted and held at working temperature in heated tanks.

  2. Chocolate Tempering

    Controlled heating and cooling sets the cocoa butter into a stable crystal form.

  3. Depositing and Moulding

    Tempered chocolate is deposited into moulds and vibrated to remove air.

  4. Controlled Cooling

    Filled moulds pass through a cooling tunnel under controlled conditions.

  5. Automatic Demoulding

    Set product is released from the moulds and the moulds are returned to the line.

  6. Inspection and Quality Control

    Product is inspected before packaging.

  7. Chocolate Packaging

    Finished chocolate is wrapped and packed.

  • Melting and storage — melting tanks and holding tanks keep chocolate at working temperature.
  • Tempering — a tempering machine brings the chocolate to the correct crystal structure.
  • Depositing and moulding — depositors fill moulds; vibrating tables remove air.
  • Cooling tunnel — controlled cooling sets the chocolate.
  • Demoulding — finished product is released from moulds and moulds are returned.
  • Enrobing — where coated rather than moulded products are produced.
  • Packaging — flow wrapping and secondary packaging.

Chocolate production requires a temperature and humidity controlled production area, because tempering and cooling depend on stable ambient conditions.
