Production process
Dough Mixing
Base dough is prepared to the required consistency.
Lamination
Dough and fat are sheeted and folded repeatedly to build the layered structure.
Cutting and Rolling
The laminated sheet is cut to shape and rolled into the croissant form.
Proofing
Formed product is proofed under controlled temperature and humidity.
Baking
Product is baked; the layers separate to form the croissant structure.
Cooling and Packaging
Baked product is cooled before wrapping or bagging.
