A bread production line takes flour and ingredients through mixing, dividing and forming, proofing, baking, cooling and packaging. The equipment differs considerably by bread type: Arabic pita is produced on a line with a high-temperature tunnel oven that puffs the flatbread, while pan and toast bread require dividing, moulding, tin handling and a longer proofing and baking cycle.

Production process

  1. Dough Mixing

    Flour, water and ingredients are mixed to the required dough consistency.

  2. Dividing and Forming

    Dough is divided to weight and formed to the product shape.

  3. Proofing

    Formed dough is proofed under controlled temperature and humidity.

  4. Baking

    Product is baked in a tunnel or rotary oven matched to the bread type.

  5. Cooling

    Baked product is cooled before packaging to prevent condensation.

  6. Packaging

    Cooled product is sliced where required, then bagged or flow wrapped.

Factory requirements

A bakery line requires a hygienic production area with separated flour handling, production and packaging zones. Floor space is required for the line in sequence plus ingredient and finished goods storage. Water, gas or electrical supply for the oven, and three-phase electrical supply are required. Specific requirements depend on the configuration and are confirmed in the technical proposal.
