Biscuit manufacturing covers several distinct product routes, and the equipment differs meaningfully between them. Hard biscuit is produced by rotary cutting a developed dough; soft biscuit is produced by rotary moulding a short dough; sandwich biscuit adds a cream sandwiching stage after baking; wafer production is a different process again, using batter baked between plates rather than a dough passing through a tunnel oven.

Production process

  1. Raw Material Preparation

    Flour, sugar, fat and other ingredients are prepared and weighed to the recipe.

  2. Dough Mixing

    Ingredients are mixed to the dough type required by the biscuit product.

  3. Dough Feeding and Forming

    Dough is fed to a rotary cutter or rotary moulder, depending on whether hard or soft biscuit is being produced.

  4. Tunnel Oven Baking

    Formed pieces pass through a tunnel oven on a continuous band.

  5. Oil Spraying and Surface Treatment

    Surface oil or other treatment is applied where the product requires it.

  6. Cooling Before Packaging

    Baked biscuit is cooled on a conveyor before packaging or sandwiching.

  7. Arranging and Packaging

    Product is arranged, stacked and packaged.

A biscuit factory requires separated flour handling, production and packaging areas, with the oven and cooling conveyor forming a long continuous run that determines much of the floor plan.
